Sous Vide Survey

The Ministry of Agriculture & Forestry's Food Standards Team are currently undertaking a survey to better understand the use of sous vide cooking techniques in the hospitality industry.

This cooking practice is currently causing some "angst" to environmental health staff at local councils as the practice is not currently within the scope of the food service template.  The results of the survey will assist towards developing guidance for the food safety templates and a training session for auditors.
